How Do you make Jambalaya
 for 10,000 ?

This was a fund raiser for the New Orleans Police Department. A fun run and walk which we had about 10,000 people participate. In order to make this much Jambalaya you start about 2 AM and work until finished, about 11 AM ready to serve hungry runners after they finish the race. Above you will see the large specially designed cast iron pots we use here in South Louisiana to make Jambalaya, Gumbo and many other Cajun and Creole dishes. These pots will make a 50 pound batch, meaning the finished product will use 50 pounds of Raw Rice not to mention the other ingredients about 800 finished portions per batch. Listed below are the ingredients we used to make Jambalaya for 10,000

Boneless Chicken thigh meat
